Simple Double Chocolate Chip Blondies

These blondies have been a life saver for me. They are absolutely delicious and chewy and they are quick and easy to make. I have whipped them up on countless occasions and they have never failed me yet. Everyone seems to gobble them up and there are smiles all round. They also do quite well if you are traveling anywhere so are an ideal picnic treat.

Simple Double Chocolate Chip Blondies (makes about 24 bars)

210 ml butter, very soft

2 cups light brown sugar

2 eggs

2 tsp vanilla extract

2 cups plain flour

1/2 tsp salt

1 tsp baking powder

1/2 cup white chocolate chips

1/2 cup milk chocolate chips

  • Preheat oven to 175ºc or 350ºf and grease and line a 9×13 inch tray with baking parchment.
  • In a large bowl beat the butter and sugar together until smooth. Beat in the egg and vanilla extract.
  • Sift in the salt, flour and baking powder and fold in until incorporated. Fold in the white and milk chocolate chips.
  • Pour into the prepared tray and smooth the surface.
  • Bake in the oven for 24-28mins until a skewer inserted int the center comes out clean. Allow to cool in the tray then remove and cut into 24 bars.
