Zesty Lemon Squares

I made these lemon squares recently for a picnic. They are light and zesty and to my surprise, traveled extremely well. They were quick and easy to put together and were very handy because they were made from ingredients that I always have lying around the house. I baked them for the full 25mins but it would depend on your oven.

Zesty Lemon Squares ( makes about 9)

Base:

1/4 cup/50g granulated sugar

3 tbsp/42g butter, softened

1 cup/128g plain flour

Lemon Topping:

3 large eggs

3/4 cup/150g granulated sugar

zest and juice of 2 lemons

3 tbsp/24g plain flour

1/2 tsp baking powder

1/8 tsp salt

2 tsp icing sugar

  • Preheat the oven to 175°c/350°f and grease and line an 8 inch square baking tin.
  •  For the base, cream the sugar and butter together with an electric mixer until light and fluffy then beat in the flour gradually until it resembles fine bread crumbs.
  • Put this into the prepared tin and pack down lightly. Bake this in the oven for 15mins.
  • For the lemon topping, beat the eggs on medium speed until foamy then add the sugar, lemon zest and juice, flour, baking powder and salt and beat until incorporated.
  • Pour onto the partially baked base and bake in the oven for 20-25mins or until the topping has set.
  • Cool on a wire rack, sift the icing sugar evenly over it and slice into squares.
