Blueberry Crumble Bars

This was my second recipe to try on my best bar mission this weekend. What really caught my eye was the amazing purple-blue colour. They are also quite easy as it is basically mixing ingredients together in two bowls and then assembling them in the tray. It does take quite a while in the oven so not the best recipe if you are in a major rush but if you can you should try these and blueberries will become your new best friend. I used thawed frozen blueberries which are great as you can have them on stand-by in your freezer for when you need them.

 Blueberry Crumble Bars 

For crumble base and topping

1 cup castor sugar

1 tsp baking powder

3 cups plain flour

1/4 tsp salt

zest of 1 lemon

1 cup melted butter

1 egg, beaten

For blueberry filling

1/2 cup castor sugar

4 tsp cornflour

juice of 1 lemon

4 cups blueberries

  • Preheat the oven to 190ºc/ 375ºf and grease and line a 9×13 inch baking tray.
  • In a medium bowl, mix together the sugar, baking powder, flour, salt and lemon zest.
  • Using a fork mix in the melted butter and egg until you get an even crumbly mixture.
  • Pack half of the crumble mixture into the prepared tray.
  • In another bowl mix the sugar, cornflour and lemon juice then gently stir the blueberries through. Spread this evenly over the crumble base and then sprinkle the remaining crumble in an even layer over the blueberries.
  • Bake for 45-55mins until the crumble has turned a beautiful golden brown.
  • Allow to cool in the tray then remove and cut into bars.
