Best Banana Bread in the World

This banana bread, in my opinion, is literally the best banana bread in the world. It is extremely moist and superbly light and fluffy. The raisins and walnuts give it an amazing texture( although it would be equally as good if you wanted to omit them) and the banana and cinnamon go together deliciously! I have to give credit to my best friend, A, for finding it in the first place though. She would bring it for lunch and I would beg her for every spare crumb! She finally gave in and thankfully gave me the recipe. It’s great also because it uses up over ripe bananas and it freezes really well. I cut it into slices then wrap them up individually before freezing which makes it easy to grab a slice whenever and pop it in the microwave to defrost.


Best Banana Bread in the World (1 loaf)

100g butter, softened

100g dark brown sugar

1 egg

450g ripe bananas, mashed

3tbsp natural yogurt

1tsp vanilla extract

225g plain flour

1tsp bicarbonate of soda

2tsp cinnamon( or more to taste)

1/4tsp salt

100g raisins

50g pecans/walnuts, chopped roughly

  • Preheat oven to 180ºc/355ºf and grease and line a 2lb loaf tin.
  • Beat the butter and sugar until pale and creamy then add the egg and beat until smooth.
  • Add the mashed bananas, yogurt and vanilla extract and mix until incorporated.
  • Sift in the flour, bicarbonate of soda, cinnamon and salt and fold into the banana mixture. Finally, stir in the raisins and chopped nuts.
  • Pour into the loaf tin and bake in the oven for 1hr or until a skewer comes out clean. Check halfway through and if it is getting too brown, cover with tin foil and return it to the oven.
  • Let it cool in the tin then turn out, slice and serve.
