Marbled Cream Cheese Brownies

There is no long explanation behind where I found these. It was simply on a midday food show but they just looked AMAZING! I had to try and I’m glad to report that that they are easy to make and every single bit as superbly delicious as they sound!

Marbled Cream Cheese Brownies (makes about 9)

Brownie

150g butter

200g dark chocolate

250g golden caster sugar

1tsp vanilla extract

pinch of salt

1tsp instant coffee dissolved in 100ml of boiling water

3 eggs

100g plain flour

Cream Cheese Topping

150g cream cheese

60g golden caster sugar

1tsp vanilla extract

1 egg

  • Preheat the oven to 180ºc/350ºf. Grease and line a 20cm square tin.
  • Melt the butter and chocolate in the microwave in 30sec bursts until it is completely melted and smooth.
  • Transfer to a medium bowl and mix in the sugar, vanilla and salt. Whisk in the eggs until shiny. Beat in the dissolved coffee until smooth.
  • Sift in the flour and beat again until incorporated. Pour into the prepared tin and set aside.
  • For the cream cheese topping, beat the cream cheese until soft and creamy, 1-2mins then beat in the sugar vanilla and egg until incorporated.
  • Blob the cream cheese topping onto he brownie mix. Then with a wooden skewer, run it back and forth to create a marbled effect. Don’t over mix or you will lose the marbled effect.
  • Bake in the oven for 30-45mins or until a skewer comes out slightly moist, don’t over cook it or it will be dry. You may have to cover the top with tinfoil to prevent it burning.
  • Allow to cool( if you can resist it!) and cut into squares.
