Baked Teriyaki Salmon

This is my ultimate favorite way of cooking salmon. It is super quick and is basically just throwing a few ingredients into a bowl. The salmon always comes out really moist and packed with flavor. It is great as a dinner party dish as it seems like there has been loads of effort put in but in fact its so easy. You can whisk up the marinade hours before and have the salmon marinating so you can just throw it in the preheated oven and next thing you know there is an amazing meal waiting for you to gobble it up! It is great served on a bed of brown rice with a crisp side salad.

Baked Teriyaki Salmon(Serves 4)

2tbsp dark soy sauce

1tbsp Chinese rice wine/dry white wine

1tbsp honey

1tbsp soft dark brown sugar

juice of 1 lime

1tsp sesame oil

1 chilli, finely chopped

2 garlic cloves, minced

4 skinless salmon fillets

2 large spring onions, finely sliced

a handful of toasted sesame seeds

  • Preheat the oven to 200ºc/375ºf
  • In an oven proof dish whisk together the soy sauce, wine, honey, brown sugar, lime juice, sesame oil, chilli, garlic and spring onion.
  • Add the salmon and toss to coat. Bake in the oven for 15-25mins until the salmon is cooked all the way through.
  • Serve sprinkled with sesame seeds with the brown rice and salad.
