Lemon and Herb Grilled Trout

There are some things in cooking that just shouldn’t be messed with and the marriage of lemon, herbs and a fresh fillet of fish is at the top of the list. Each flavor works perfectly together and the fish comes out flaky and moist. If all that wasn’t enough of a reason to try this dish, it can be prepared and cooked in less then 20mins. Perfection!

Lemon and Herb Grilled Trout (Serves 2)

2 fillets of trout

1tbsp olive oil

salt and pepper

1 lemon

1/2tsp dill

1/2tsp parsley

Salad and mashed potatoes, to serve

  • Preheat the grill to high and lay a piece of tin foil over a baking tray.(Not essential, but it saves cleaning!) Drizzle the fish with the olive oil and season with salt and pepper. Rub into both sides of the fish.
  • Lay the fish skin side down and squeeze the juice of 1/2 lemon over the fish. Sprinkle with the dill and parsley and put under the grill for 10-12mins or until the fish is cooked through.
  • Serve the trout start away with 1/4 lemon.
