Seriously Super Salad with Sweet Chilli Dressing

Today I really felt like having an amazingly crisp salad full of goodness and fresh ingredients. The more I thought about it the more the recipe just kind of formed in my head, so much so that by the time six o’clock (dinner time in my house) came around all I could think about was the salad! I kind of went crazy and added loads of ingredients but they all go really well and it turned out just as I had hoped. I think it would be a great salad for lunch or to bring on a picnic, I hope you like it! 😀

Seriously Super Salad with Sweet Chilli Dressing (Serves 2)

1 cos lettuce, sliced thinly

1/2 cucumber, sliced

1/2 can of sweet corn

1 yellow pepper, sliced

2 tomatoes, sliced

1 eating apple, cored and sliced

2 bacon rashers

2 eggs

2 cooked chicken breasts, sliced

Sweet Chilli Dressing:

2tbsp sweet chilli sauce

juice of 1 lime

1 garlic clove, minced

1/2tsp minced ginger

1/4 cup vegetable oil

  • Put the two rashers on the grill and cook until slightly crisp. Put the eggs in a pot and cover with water, put over a high heat and boil for about 13mins from cold (Hard boiled eggs).
  • Chop all the vegetables (and the apple) as directed and tip into a serving bowl.
  • Put all the dressing ingredients in a bowl and whisk to combine.
  • When the bacon is ready, remove the fat (optional) and slice into strips. When the eggs are done, peel off the shell and slice the eggs in half.
  • Add the bacon, eggs and cooked chicken to the salad and toss to combine, season with salt and pepper. Drizzle the dressing over the salad and serve with toasted crusty bread.

Note: You can vary the ingredients according to your own taste or even add nuts or sultanas for extra flavor. You could also use a different dressing, its really up to you!
