Simple Scrambled Eggs and Brown Soda Bread

This is one of my favorite breakfasts and I always make it for my mom if she has had a hard week and needs a good breakfast in bed. It is very basic and I think it is something everyone should know how to make. I like it best for breakfast but I’ve also had it for dinner a couple of times.You can add vegetables to it also, such as mushrooms, pepper etc.

Simple Scrambled Eggs and Brown Soda Bread (Serves 1)

2 eggs

salt and pepper

a dash of milk

2 slices of fresh soda bread

lug of olive oil

  • Crack the eggs into a bowl and beat well with a fork, add the milk and salt and pepper and beat again.
  • Heat the oil in a frying pan over a medium heat and add the egg mixture. Using a wooden spoon, stir the egg mix constantly until it starts to form into a scramble consistency.  Make sure to scrap the egg from around the edge of the pan as it cooks there first.
  • When all the egg is cooked, spoon onto a plate and serve warm with the brown soda bread.
