Sweet Chilli Tuna and Egg Salad

Sweet chilli sauce is an essential to me when I’m having tuna. They just go together so amazingly. This is a quick and tasty salad, that is super healthy. You can change up the vegetables to your liking or even add some nuts, such as pecans or almonds. This salad is full of protein too so I like to dig in to it after a run or other exercise and I find it really restoring! It’s a great meal to have during the summer but I also love having it in winter especially with sume hot, just out of the oven bread. Hope you like it. Give me your opinions down below. 😀

Sweet Chilli Tuna and Egg Salad (Serves 2)

1 tin of tuna in brine, drained

1/2 onion, finely chopped

2-3tbsp sweet chilli sauce

2 large eggs

1/2 small cucumber, sliced

a couple leaves of iceberg lettuce, shredded

1/2 red pepper, sliced

5-6 cherry tomatoes, halved

1/2 tin of sweet corn, drained

1 carrot, grated

parmesan,to taste, grated

salt and pepper

  • Put the eggs into a small pot of cold water and put over a high heat and cook for 12-13mins for hard boiled eggs.
  • In the mean time, combine the tuna, onion and sweet chilli sauce in a bowl.
  • Wash and chop all the vegetables as indicated above they divide between two bowls. Then divide the tuna mix evenly over the two salads.
  • When the eggs are done, rinse in cold water and then remove the shell. Slice in half and place on top of the salad.
  • Sprinkle with grated parmesan and season with salt and pepper. You can also drizzle with extra sweet chilli sauce if you want.
  • You can serve with a fluffy bap too!
