Sticky Chicken Tortillas

This is a great last minute recipe as most people would have these ingredients already in their house. The honey gives a delicious sweetness and it caramelizes to form a sticky and crisp coating to the chicken. You don’t necessarily need to serve this with wraps, it would also be lovely served with some creamy mashed potato and steamed vegetables , sliced up in a sandwich or stirred through pasta. You could even use this caramelizing method for other meat such as prawns.


Sticky Chicken Tortillas (Serves 2)

2 chicken breasts

salt and pepper

1tbsp olive oil

1tsp dried thyme

1tssp dried rosemary

a drizzle of honey

To Serve:

shredded carrot

iceberg lettuce

cherry tomatoes, halved

cucumber, sliced

sweetcorn etc.

sauces e.g. hummus, salsa, natural yogurt dressing etc.

  • Slice the chicken breasts in 4 large strips each then season with salt and pepper.
  • Heat the olive oil in a small frying pan and cook the chicken srtips until golden and cooked all the way through.
  • Add the thyme and rosemary and toss to coat, then drizzle over the honey and mix the chicken around.
  • Cook over a low heat until the honey has caramelized over the chicken, turning occasionally.
  • Serve with the veggies and sauces and let everyone make their own.
