Sweet n Spicy Mixed Beans

I personally think mixed beans in a tin are a god send. They are so versatile, incredibly nutritious and pretty darn tasty too. For those reasons I am always looking for new ways to incorporate them into my dishes. And so my sweet n spicy mixed beans were born! This is such a tasty side-dish  It is kind of like  seriously amped up baked beans. It is really straight forward and uses all store cupboard ingredients. What’s not to like? 🙂

Sweet n Spicy Mixed Beans (Serves 3-4)

1 onion, thinly sliced
3-4 garlic cloves, minced
1tbsp rapeseed/olive oil
1 x 400g tin of mixed beans
3tbsp Worcestershire sauce
2tbsp tomato puree
2tsp light brown sugar
1tsp oregano
1/2tsp sweet paprika
100ml beef stock
salt and pepper

  • Heat the oil in a small frying pan and fry the onion and garlic until softened.
  • Add the mixed beans and fry for 2-3mins then add the Worcestershire sauce, tomato puree, brown sugar, oregano, paprika and enough beef stock to loosen the sauce.
  • Cook for 2-3mins over a medium heat.
  • Season with salt and pepper and serve hot.
