Warm Sweet Chilli Tuna and Lentil Salad

This is a really tasty and light dinner. The lentils are a great alternative to pasta or rice and is a super change from the usual. The tuna and sweet chilli flavors go together perfectly and the whole dish is nutritionally well balanced. It is really quick to put together which is great if you get in late from work or a long walk on the beach (as in my case!) It would also be a really handy dish to bring to work or school, work or a picnic as it is really yummy cold and it can be popped right into a lunchbox.


Warm Sweet Chilli Tuna and Lentil Salad (Serves 2)

1 onion, sliced

3 garlic cloves, minced

1tsp sesame oil

1/4 broccoli head, cut into florets

1/2 red pepper, cut into strips

1/2 small courgette, sliced

1 cup frozen peas

1 x 250g pack puy lentils

1 tin tuna, drained

3tbsp sweet chilli sauce

2tbsp soy sauce

2tsp distilled white vinegar

1 1/2tsp sesame oil

60ml water, mixed with 1 1/2tsp cornflour

salt and pepper

  • Heat the 1tsp sesame oil in a wok and fry the onion and garlic for 2-3 mins then add the broccoli, pepper, courgette and peas and cook over a medium heat until the veggies are softened.
  • Prepare the puy lentils according to the packet instructions then add to the veggies along with the tuna. Take off the heat for a minute while you make the sauce.
  • In a bowl, mix the sweet chilli sauce, soy sauce, distilled white vinegar, sesame oil and cornflour mixture then pour into the wok. Return to the heat and cook for 2 mins, stirring regularly, just until everything is hot.
  • Season with salt and pepper then serve steaming with corn on the cob.
