Chorizo, Tomato and Bean Pasta

Today, I was sitting on the couch, being totally lazy, and my stomach started rumbling. I had no clue what I was going to do for dinner and so I went to scour the cupboards. My mom said to use chorizo is something and I had a real yearning for mixed beans. Even as I was putting this together, I didn’t really know what I was doing. I just kept tasting it and I think I somehow ended up with a really tasty dish, if I do say so myself. It is a dish that really makes the most of store cupboard ingredients and it was put together in a flash.

Chorizo, Tomato and Bean Pasta (Serves 2-3)

100g chorizo

1 onion, diced

3 garlic, miced

1/2 yellow pepper, cut into strips

1/2 cup frozen peas

100-150g pasta, any shape

1/2 x 400g tin chopped tomatoes

1/2 x 400g tin mixed beans, drained

3/4tsp caster sugar

1/2tsp dried basil

1/2tsp dried thyme

salt and pepper

  • Cook the pasta according to packet instructions and meanwhile get the rest of the dish made.
  • Heat a wok or a deep frying pan over a high heat and add the chorizo, cook until the chorizo gives up it’s oil then add the onion, garlic, pepper and peas. Mix and cook until softened.
  • Add 1/2 the tin of tomatoes and 1/2 the tin mixed beans and stir to combine. You may need to add a drop of water to loosen up the sauce.
  • Sprinkle over the sugar, basil and thyme and mix in. Season with salt and pepper and cook for about 2 mins until everything is piping hot. Season to taste.
  • Serve the chorizo mixture over the pasta and enjoy.
