Chilli and Chocolate Pancakes

Every year on pancake Tuesday, I always go for very traditional flavors such as lemon and sugar, maple syrup or strawberries and cream. But this year I was determined to go out of my comfort zone and try a totally new pancake. So after a long hard think and some deliberation, I chose chilli and chocolate because the combination of these flavors had always intrigued me and I thought, why not? I am so happy I didn’t play it safe because the pancakes came out amazingly! The chocolate melted and just oozed out of the pancakes when you cut into them and the chilli gave it a perfectly subtle kick of heat. They were amazing, if I do say so myself. They would be great served with some cream or ice cream and strawberries.

Chilli and Chocolate Pancakes with Strawberries (Makes about 10 pancakes)

150g self raising flour

1tbsp caster sugar

1 egg, lightly beaten

150ml milk (I use low fat)

75g dark chocolate, cut into small chunks

1 red chilli, finely chopped

Sunflower/vegetable oil

Sieve the flour into a bowl then stir in the sugar and chocolate chunks.
In another bowl, mix the egg, milk and chilli together.
Make a well in the centre of the dry ingredients and add the liquid. Mix just until combined, over mixing results in tough pancakes.
Heat a tablespoonful of oil in a frying pan over a medium/low heat. Put spoonfuls of the mixture in the pan and cook until you can see the pancake mixture bubbling. Turn the pancakes then cook until firm in the centre and the outside is all golden.
Serve the pancakes hot with sliced strawberries.
