Sundried Tomato and Mozzarella Melts

This is one of the most simple dishes ever but it is just so tasty. I mean it tastes like it should be being served at a 5 star restaurant but absolutely everyone could make this. It literally couldn’t be simpler and it is done in a flash. It certainly filled a void in my growling stomach today! I could rattle on and on about this dish but just take my word for it that it will blow your mind. I hope everyone tries this, it is amazing. Okay I think I’ve complemented this dish enough.


Sundried Tomato and Mozzarella Melts (Serves 2)

2 floury baps, sliced in half

8-10 sundried tomatoes from a jar, chopped roughly

1/2-3/4 cup grated mozzarella, (You could also use a ball of mozzarella)

1tsp dried oregano

salt and pepper

  • Preheat the oven to 200ºc/395ºf.
  • Lay the baps out on a tray, cut side up, and spread the sundried tomato pieces out over them evenly. Next scatter each one with mozzarella and oregano.
  • Season with salt and pepper and pop in the oven for 5-8mins or until the mozzarella is melted.
  • Serve immediately.
