Sweet Chicken Salad with Pita Bread

I absolutely love a fresh salad with a bit of  sweet, sticky chicken. It’s honestly a hard one to beat, no matter how simple. This chicken is packed with flavor even though it uses only minimal ingredients and minimal effort! The vegetables in the salad are just the basics. There are loads more veggies you could throw in. I used my own homemade pita breads which I think just makes this dish but you can obviously use store bought as well. If you wanted you could also serve it with garlic bread etc instead which would add even more flavor to this dish. This is a pretty basic recipe all round, which can be the best kind, but it would be easy to jazz this up to your own tastes.

Sweet Chicken Salad with Pita Bread (Serves 2)

2 chicken breasts

2tsp sesame oil

1tsp dried coriander leaf

1tsp paprika

salt and pepper

2tbsp honey

2tbsp sweet chilli sauce

1/2 red onion, sliced into wedges

1/4 head iceberg lettuce, shredded

1 red pepper, diced

1/2 tin of sweet corn, drained

1/3 cucumber, sliced

2 spring onions, finely sliced

2 eggs

2-4 pita breads, depending on how hungry you are!

  • Mix the coriander and paprika in a bowl then season to taste. Rub the chicken breasts in the mixture until well coated.
  • Put the eggs in a pan of cold water and put over a high heat to cook for 12-14mins for hard boiled eggs.
  • Heat the oil in a small frying pan over a high heat. Add the chicken breasts and cook for 3mins on each side. Drizzle with the honey and sweet chilli sauce and rub the chicken breasts in it. Cook for a further minute.
  • Remove from the pan and leave on a chopping board. Add the red onion and cook for 2-3mins until softened.
  • In a large salad bowl toss together all the salad ingredients. Slice the chicken into slices then add to the salad with the red onion and all the juices. Toss again to combine.
  • Peel the eggs and slice in half. Heat the pita breads in the microwave for about 20-30secs. Spoon the salad into bowls and top with an egg each. Serve with the warm pitas. You can drizzle the salad with some extra sweet chilli sauce if you want.
