Warm Crumpets with Greek Yogurt and Stewed Berries

25 Feb

This is a great Sunday brunch to bring a smile to your face. It is very easy so your brain doesn’t have to start working too early in the morning. Its also a great way to enjoy crumpets without the lashings of butter you usually spread on them. Kids will love this because it’s sweet but using all good sugars, so they are being healthy but they’re still satisfied.

Warm Crumpets with Greek Yogurt and Stewed Berries (Serves 1)

2 crumpets

50g frozen blueberries

100g frozen strawberries

1tsp mixed spice

Light brown sugar, if necessary

1-2tbsp Greek yogurt

  • Pop the crumpets in the toaster and toast to your liking.
  • Put the blueberries, strawberries and mixed spice in a small pot and cook over a medium heat, stirring regularly, until the berries soften. You may need to add a drop of water if the berries are sticking.
  • Taste the berries and add some light brown sugar, if needed.
  • Serve the compote over the crumpets with spoonfuls of yogurt and a drizzle of honey.
