Scrambled Eggs, Crispy Bacon and Chilli Jam Breakfast Pita

Scrambled egg is one of those breakfast staples that just never gets old. You can use it in all different ways but this dish here is one of my all time favorites. The sweet, spicy chilli jam is the most heavenly accompaniment to scrambled eggs and its so handy to have a jar of it in the fridge to use with nearly everything. It’s a crime if you haven’t tried it. The bacon is just the icing on the cake here but its much healthier if you remove all the fat, so you don’t have to worry about it just enjoy the deliciousness of your breakfast!

Scrambled Eggs, Crispy Bacon and Chilli Jam Breakfast Pita (Serves 2)

3 eggs

a drop of milk, about 2tbsp

1/2tsp dried chives

salt and pepper

1tbsp olive oil

2 rashers, fat removed

2 heaped tsp chilli jam

2 pita breads, you could also use floury baps or even just toast

  • Preheat the grill to high.
  • Beat the eggs together and add the milk and chives. Season with salt and pepper.
  • Lay the bacon on a tin with a rack or just use a baking tray lined with some tin foil. Pop under the grill for about 6mins then turn and grill for a further 4-6mins until cooked and crispy.
  • Meanwhile pop the pitas in the microwave or toaster until just warm/lightly toasted.
  • Heat the oil in a small frying pan and pour in the beaten egg, use a wooden spoon to gentle mix the egg until it is all cooked.
  • Slit open the pitas and spread with the chilli jam, layer in the bacon then the scrambled egg and take a big munch.
