Creamy Vanilla Custard

I have one word for this custard and that’s AMAZING! I have never tasted anything so good. My family have always used the custard powder from the tin and I always that I actually liked it but I was so wrong. Compared to this homemade custard, it is kind of terrible. This custard is sweet, creamy with a gorgeous vanilla note. It is reasonably easy to make, how easy can custard really be? But the taste makes it so worth it. I recommend to everyone to try this, I mean everyone. You will never, ever look back. I served my custard with yummy apple crumble and I think I might have saw a glimpse of Heaven! I think I could eat that everyday and never get sick of it. This is a definite must try.


Creamy Vanilla Custard (Serves 2)

250ml milk, I used low fat

1 vanilla pod, split open

3 egg yolks

50g caster sugar

  • In a medium pan, heat the milk and vanilla pod over a medium/low heat.
  • Meanwhile, beat the egg yolks and sugar together in a large bowl until it is pale and fluffy.
  • Pour the milk into the egg yolk mixture in a thin stream while continuously whisking.
  • Once all the milk is incorporated, pour back into the pan and heat over a low heat for 5-8mins, stirring all the time until it coats the back of a spoon.
  • Remove the vanilla pod and transfer to a jug to serve.
