Vanilla Cream Cheese Sugar Cookies

I do love my fancy desserts and quirky baking ideas but even I have to agree that sometimes the simple things are the best. These cookies are super simple to throw together and can be pre-made and left in the fridge until you want to bake them. They are a very basic flavor which means that you can really go to town on the flavors and combinations you use to top them. I played it safe, sticking with a yummy vanilla icing. They came out perfectly and are really easy to transport as they are quite sturdy. These are fantastic to make with kids as they will love decorating them, I know I did!



Vanilla Cream Cheese Sugar Cookies

1/2 cup butter, softened

85g cream cheese, I used low fat

1tsp vanilla extract

2 1/2tbsp caster sugar

1 cup plain flour

  • Preheat the oven to 190ºc/375ºf and grease and line a cookie tray with baking parchment.
  • Beat the butter and cream cheese together until creamy and well combined. Beat in the vanilla.
  • Add in the sugar and beat until mixed thoroughly then sieve in the flour.
  • You may need to get your hands in here. Mix and scrunch it all together until it comes together and forms a dough.
  • Chill in the fridge for 1 1/2hrs or until it is quite firm.
  • Roll out to about 1/8 inch thick and cut into shapes.
  • Bake in the oven for 8-10mins until golden.
  • Let cool then decorate with whatever springs to mind. I used simple vanilla icing, the recipe is below.


Basic Vanilla Icing:

1 cup icing sugar

2tbsp water

1tsp vanilla extract

food coloring, optional

  • In a small bowl, mix all the ingredients together except the food coloring.
  • Add more water for a runnier texture or more icing sugar to stiffen it up.
  • Add the food coloring to a shade of your liking.
