Vanilla and Cinnamon Almond Butter

I have always been a firm peanut butter lover, but I am always been intrigued by other nut butters that I find in my local health food shop. The only problem is the astronomical price tag attached to them! I can just never justify spending that much money when it will probably be eaten in about two days flat. I could never make my own because our food processor broke and we have been looking for a good deal on a new one. Finally we found one on sale and it was perfect. The first thing in it? Almonds! This nut butter is so easy, pure and healthy. It tastes absolutely fantastic, I personally rather the almonds toasted but plain almonds is amazing too. There are loads of flavor combinations you could add to this. Vanilla and cinnamon is just a bit of a fool proof one but feel free to experiment and let me know if you find any good ones! 🙂

Vanilla and Cinnamon Almond Butter

300g almonds

2tsp vanilla extract, or 1 vanilla pod

1tsp ground cinnamon

A pinch of salt

1tsp groundnut oil, or any other flavorless oil

  • You can toast your almonds if you want a more nutty taste. If so spread them out in an even layer on a lined baking sheet and bake in an oven preheated to 170ºc/340ºf for about 10mins.
  • Pop your nuts in a food processor and process for about 10-15mins, scrapping down the bowl regularly.
  • The nut butter will go through several stages before it becomes creamy.
  1. The nuts will turn into a fine dust.

  1. The mix will start to clump together.

  1. It will form a thick, rough paste. If it won’t form a paste add 1tsp of groundnut oil.

  1. It will turn into a creamy, smooth nut butter.

  • Add the vanilla, cinnamon and salt to you taste into the mix and process until combined. Spoon into jars, or just eat it from the spoon, and store in the fridge.
