Chocolate Chip Cookie in a Mug

26 May

I stumbled upon this recipe the other night after I had been out, my friend Sara had come back to the house for a while and as we were sitting at the table chatting away I had a sudden urge for dessert. Mug cake popped into my head because I needed something yummy and quick because it was about half eleven by this stage. So I starting scouring the internet in search of something that fit the bill and I found this. Sara couldn’t believe her eyes when I hopped up and announced that I was making dessert.

I went to work and within about five minutes I was setting down a piping hot cookie in a mug down in front of the two of us. We tucked in and it couldn’t have been better, it tasted just like a classic choc chip cookie and it was warm with melty chocolate pieces and a gooey middle… utter bliss! It doesn’t get easier, cooking wise, and is the perfect recipe for an utter beginner.

Chocolate Chip Cookie in a Mug (Serves 1)

1tbsp butter

3/4tbsp granulated sugar

1tbsp dark brown sugar

a pinch of salt

a drop of vanilla extract (1/2tsp)

1 egg yolk

1/4 cup plain flour

25g milk chocolate chips

  • Melt the butter in a medium mug in the microwave, stir in the two types of sugar until combined.
  • Stir in the salt, vanilla and egg yolk.
  • Stir in the flour and chocolate chips.
  •  Microwave for 30-60sec depending on how powerful your microwave is. Check after the first 30sec.
  • Serve straight away with or without a scoop of vanilla ice cream.
