Super Healthy Banana, Peanut Butter and Chocolate Chip Ice Cream

Oh my god… This has to be one of the most amazing culinary finds I have found ever, like EVER! It is velvety, smooth ice cream made without cream, I mean could it get any more amazing? I know what you are all thinking, how could she possibly make ice cream creamy without cream but it is. It is one of the most luscious ice creams I have ever had, somehow the frozen bananas become creamy as whipped double cream when they are whizzed in the processor.


This is a vegans dream because the milk can be easily substituted with almond milk making it completely dairy free and the best ice cream ever.It is low in calories because it is made of fruit and is an awesome way to end a lovely sunny day like today, I know lovely sunny days in Ireland only come once a year it seems but this would even be worth having if you were already cold!


The peanut butter and chocolate chips are optional, it could just as easily be flavored with cinnamon and raisins, vanilla, toasted and crushed hazelnuts or even some smarties and chocolate syrup. By the way I would just like to apologize for the excessive use of the word cream… No matter how many times I rephrased the sentences it just kept coming up!


Super Healthy Banana, Peanut Butter and Chocolate Chip Ice Cream (Serves 2)

3 medium bananas

1tbsp skimmed milk

2tbsp peanut butter, smooth or chunky

50g milk/dark chocolate chips/chunks

  • Peel the bananas, place in a bag and freeze for about 3-4hrs until frozen solid.
  • Put the bananas, milk and peanut butter in a food processor and whizz until smooth and creamy with no lumps.
  • Scoop into a small lunchbox and mix in the chocolate chips. Eat immediately or return to the freezer until ready to use.
