Reverse Egg Fried Rice

Now you might be wondering, what in the name of god does she mean by reverse  egg fried rice? It simply means that instead of it being a mainly rice based dish, this is a mainly egg based dish. I created it when I had a bit of brown rice leftover in the fridge and I was throwing together a quick scrambled egg dinner for myself. The rice through the eggs was delicious and I was hooked on my reverse idea.


I upped the rice a bit from when I made it the first time but this is really just a super easy dinner that can be thrown together so quickly, providing you have leftover cooked brown rice. It is super nutritious too because I obviously couldn’t help throwing loads of veggies into the mix as well.  The veg I list below is just suggestions, this would work perfectly with any sort of veg. Also feel free to add in your own herbs and spices.


Reverse Egg Fried Rice (Serves 2)

1tbsp olive oil

1/2 red pepper, diced

1/4 courgette, diced

1/2 onion, diced

3 garlic cloves, minced

4tbsp tinned and drained sweetcorn

3/4 cup cooked and cooled brown rice

4 eggs

2tbsp skimmed milk

1tbsp chopped fresh chives

salt and pepper

  • Heat the oil in a medium frying pan over a medium heat and add all the veggies, cook for 2-3mins until softened.
  • Add in the rice, stir to combine and season with salt and pepper.
  • Beat the eggs and milk together and season with salt and pepper.
  • Pour into the frying pan and stir constantly, scraping all around the sides until all the egg is cooked.
  • Serve hot with a fresh side salad.
