Essential and Simple Tomato Sauce

Tomato sauce is something that every chef, no matter how amateur, should know how to do and do it well. This is a great simple sauce that makes about 2 small jars so it can be kept in the fridge to be used whenever you need weather its to top a delicious pizza or to stir through pasta for a quick and satisfying meal. This is a recipe that once you try it you will never be stuck for a meal. To make this even easier you can substitute the fresh herbs for dried if your stuck. Just swap the tbsp for a tsp.

Essential and Simple Tomato Sauce

1tbsp olive oil

1 small red onion

3 garlic cloves

1 x 400g tin chopped tomatoes

1tbsp fresh chopped basil

1tbsp fresh chopped oregano

1/2-1tsp granulated sugar

salt and pepper

  • Heat the oil in a small saucepan over a medium heat and fry the onion and garlic for 2-3mins until softened and lightly golden.
  • Pour in the chopped tomatoes, basil, oregano and sugar.
  • Season to taste and bring to the boil.
  • Reduce the heat to low and simmer for 10mins.
  • You can now blend it with a stick blender or leave it as is and use as needed.
