Vanilla Cupcakes with Vanilla Cream Cheese Frosting

I was recently asked to make some cupcakes for a summer get together. I was given free rein regarding flavor and decoration. As I was pondering over what I could make, I realized that vanilla is always a winner and that sometimes it can be the perfect, simple end to a meal.


Personally I always prefer a cream cheese frosting to any sort of butter cream or ganache you could offer me so that is exactly what I used and boy was it good. It was like a little cake from heaven. It just shows that keeping things simple and subtle can be so good. To top everything off it is a super easy recipe and is really fun to decorate as well.


Vanilla Cupcakes with Vanilla Cream Cheese Frosting (Makes 12-15)

For the Cupcakes:

1 1/2 cups flour

1 tsp baking powder, heaped

a pinch of salt

1/2 cup butter, softened

1 cup caster sugar

2 large eggs

1tsp vanilla or the seeds from 1/2 vanilla pod

1/2 cup milk

For the Frosting:

50g butter, softened

200g cream cheese

3 cups icing sugar, more or less depending on desired consistency

1tbsp skimmed milk

2tsp vanilla extract/seeds of 1/2 vanilla pod

food coloring, optional

  • Preheat the oven to 180°c/350°f and line 2 cupcake trays with cupcake cases(You won’t use all the holes).
  • Mix together the flour, baking powder and salt in a small bowl and set aside.
  • Cream the butter and sugar together in a large bowl until fluffy and pale about 4mins. Beat in the eggs one at a time. Beat in the vanilla extract or vanilla seeds.
  • Beat in the flour mixture and milk alternately starting and finishing with the flour until just fully incorporated.
  • Divide the batter between the cases filling pretty much to the top.
  • Bake in the oven for 12-16mins or until a skewer comes out clean.
  • Let cool for 5mins in the tin then remove and let cool completely before decorating.
  • For the frosting, beat the butter for 30sec until creamy then add in the cream cheese and beat again until fully combined, scraping down the sides if needed.
  • Turn the mixer down to low and beat in the icing sugar, milk and vanilla extract/seeds. Add more icing sugar as needed until you get the desired consistency.
  • Lastly beat in the food coloring if using and pipe or spread onto your cupcakes.
