Protein Boost Yogurt Raspberry Trifle

This is such a yummy dessert or breakfast and is ridiculously quick and healthy. It is jam packed with protein from the PB, flaxseed and protein powder and the yogurt and berries make if refreshing and filling. It looks super pretty and can be mixed up if you want a change.

For example, you could use any sort of nut butter, almond butter would be great, strawberries, raspberries or even another type of soft fruit such as peaches or ripe pears would go fantastic and the yogurt flavor can be whatever you fancy really. This could even be a handy dessert for a picnic if you assembled it in a kilner jar and keep it chilled. It is a great alternative to sugar laden treats and kids will love it. They would even be great at making this easy treat so make sure you get them in helping.

Protein Boost Yogurt Raspberry Trifle (Serves 1)

1 heaped tsp crunchy peanut butter

4-5 raspberries, or other berry of choice

1tsp ground flaxseed

1-2tsp crunchy granola

1tsp vanilla protein powder

1 x 125g carton of diet yogurt (I used strawberry but any flavor would suit)

extra raspberries and granola, to garnish

  • Get a small glass and spoon the peanut butter into the bottom then scatter the berries over.
  • Layer in the flaxseed, granola and protein powder next.
  • Pour over the yogurt and garnish with extra berries and a sprinkle of granola.
