Healthy Portobello Mushroom Pizzas

This is basically the perfect alternative to those heavy and not so good for you pizzas that we all love so much. It has all the flavors that a classic pizza needs and also has a lovely meaty mushroom base. Not only is it a super healthy alternative, but it is way faster and easier because there is no hassle of making the bases and waiting for them to rise etc etc.

Just to really put the cherry (Tomato! Sorry had to stick that in :D) on top these look absolutely adorable and can be made ahead of time so they would make the most amazing starter for a dinner party or even as a main if you bulked it out with veggies and a floury bun or bap. Personally I think these would also be great on a pita bread or a naan. Just like any other pizza you can mix and match the topping ingredients, there is so many ways to change up the flavor of these mushrooms from using pesto instead of sauce to changing the type of cheese or adding meat such as bacon or ham.

Kids would love making these, just lay out the mushrooms and bowls of all the different toppings and soon enough you’ll have little mushroom masterpieces that’ll also taste magnificent. Who could ask for more? 🙂

Healthy Portobello Mushroom Pizzas (Serves 2-4)

4 portobello mushrooms

a small handful of spinach

1/4 red onion, diced

1/4 yellow pepper, diced fine

2-3tbsp tomato sauce

4 circular slices/ grated fresh mozzarella or cheddar 

1tsp dried oregano

2 cherry tomatos, halved

salt and pepper

  • Preheat the oven to 180°c/375°f.
  • Wipe the mushrooms clean and remove the stem. Place them cap side up on a baking sheet and bake in the oven for about 6mins.
  • Remove and flip over so the hole where the stem was is facing up and layer the spinach, onion and pepper in.
  • Divide the tomato sauce evenly between each cup, using more or less if necessary.
  • Finally top woth cheese of choice and sprinkle generously with oregano. Place half a cherry tomato on top of each one and season with salt and pepper.
  • Bake in the oven for about 15mins until the cheese is just melted.
  • Serve on a bun for dinner or just as is for a light lunch with loads of veg or salad.
